Quick and Easy Apple Crisp...


My kids went to Chudleigh's Apple Farm for a school visit and brought back close to a dozen beautiful cortland apples, which I personally like baking with for its tart, slightly sweet flavour... I think an apple crisp is in order. I love how I was able to make this quickly after dinner on a whim with all the ingredients I had on hand. Baked in a 8 x 8 pan, it serves my family of five perfectly. Double the ingredients to make in a 9 x 13 and take it to a potluck or entertain guests as an after dinner dessert served naked or à la mode with vanilla ice cream...

Quick and Easy Apple Crisp
Makes 4 to 6 servings

5 all-purpose apples, peeled, cored and sliced
1/3 cup white sugar
1/2 cup and 1/2 Tbsp. all-purpose flour, divided
1/2 tsp. ground cinnamon
1/8 tsp. ground nutmeg
2 Tbsp. water
1/2 cup quick cooking oats
1/2 cup all-purpose flour
1/3 cup packed brown sugar
1/8 teaspoon baking powder
1/8 teaspoon baking soda
3/4 cup chopped almonds or pecans
1/4 cup butter, melted
 



Preheat oven to 350F. Place the sliced apples in a 8 x 8-inch pan. Mix the white sugar, 1/2 Tbsp. flour and spices together, and sprinkle over apples. Drizzle over with water.


Combine the oats, flour, brown sugar, baking powder, baking soda, nuts and melted butter together. Crumble evenly over the apple mixture. Bake for 45 minutes or until bubbling hot and crisp topping is golden brown.




Apple crisp... I have my eyes on you...

But seriously it's so aromatic with the mingling of sweet warm spices and apple, the best thing ever is standing or hunched over the slightly cooled dessert on the kitchen counter and eating straight out of the pan... YUM!
